Tasting: good consistency with a soft pink color with distinct cherry reflections. The nose has good intensity and discreet olfactory complexity (typical of the varietal vinified in rosé) with distinct varietal aromas represented by notes of white peach and apricot, followed by pleasant hints of jasmine. The palate is fresh, well-structured with good acidity combined with considerable smoothness.

Food pairings: excellent as an aperitif and to accompany fish and white meat dishes.

Hyper-reduction processing through saturations with CO2 in gaseous or solid form (dry ice).
Maceration and Fermentation
Short pellicular maceration in the press with subsequent soft pressing and harvesting of the flower must. Clarification by cold static decantation with subsequent racking. Fermentationfor 7 - 8 days at controlled temperature (15 - 18 °C).
Alcoholic Grade
11.73 % v/v.
Maturation
4 months in steel tanks.
